This festival is also known as the Moon Cake Festival (Zhong Qiu Jie 中秋节 ), because a special kind of sweet cake (yue bing月饼) prepared in the shape of the moon and filled with sesame seeds, ground lotus seeds and duck eggs is served as a traditional Chung Chiu delicacy. Mid-Autumn festival is celebrated on the 15th day of the 8th month in the lunar calendar every year, when the moon is at its brightest for the entire year and it is the third most important Chinese festivals.

Traditional Mooncake Premix Ingredients Needed/材料需要:
Golden Syrup 糖漿
Alkaline Water 梘水
Peanut Oil 花生油
B) Traditional Mooncake Premix
Mix well ingredients A and set aside for 30 minutes.
Add in traditional mooncake premix to form a smooth dough. Rest for another 30 minutes.
Divide the dough into 40gm each. Flatten the dough and wrap in the lotus paste. Press into the mould and knock out.
Bake at 180°C for 10 minutes, leave cool. Egg wash and bake for another 10 minutes.
